Description of Coffee |

Maria Lopez knows a thing or two about coffee. She comes from a multi-generational coffee growing family in Colombia and has been producing coffe with her husband, Humberto, for over 45 years. If her name doesn't sound familiar to you, perhaps you'll recognize her son: Milton Monroy. An esteemed coffee producer in his own right, Milton's coffees have shown up on our menu more times than almost any other producer, and for good reason. Today, however, we have the honor of showcasing a coffee from his mother's farm, where Milton still serves as Maria's right-hand man.

Maria's farm, Finca La Milagrosa, is a picturesque 18-hectare estate situated amidst the high hills of Tolima. There are several varieties grown on the farm, and the coffee we are sharing with you today is a lovely Caturra lot. We came by this coffee from our good friends at Caravela - they almost exclusively work with washed coffees, so the fact that they were keen on this anaerobic natural lot told us that it must be something special! It's also somewhat a sign of the changing tidewaters of taste. Though washed coffees have historically been the preference of specialty coffee drinkers around the world, more and more palates are beginning to prefer the flavor profiles afforded by natural coffees and uniquely fermented lots. For producers like Maria and Milton, who continually endeavor to process coffee in more environmentally sustainable ways, this shift is a huge step in the right direction.

In the cup: You're going to taste stone fruits, like black plum and cherry, sweet citrus, like tangerines, and some dessert-y decadence, like milk chocolate. This cup is clean, smooth, and highly drinkable - an excellent gateway for those who haven't tasted many naturally processed coffees! The whole experience reminds us of carefully selecting several chocolate-covered fruits from the display case at Kilwin's - and promptly popping one of the cherry cordials into our mouth.
