So excited to bring back this amazing coffee from the producers of El Eden Estate. This Lot was the best of what we were offered from them this season, and we are excited to share it with you. This years coffee is special because we worked directly with the 2 Brothers that produce this coffee, and pioneered this specific anaerobic style of production.
Overall the fermentation isn't that different than other large producers of Anaerobic Coffees. They utilize whole cherry fermentation, for fairly extended times in Stainless Steel tanks, but then after fermentation they then dry over periods of time to specific moisture percentages, and in between they allow the coffees to rest in temperature controlled warehouses, and closed containers to make sure that the moisture percentage equals out throughout the batch. Then they finish drying this coffee to the final 11% moisture. This process can take over 30 days, but gives the coffee both consistency in moisture and flavor profile. It also helps to increase shelf life for us there in NC. This process has also been used before, Shady and the team seem to be absolutely crushing it.
The crew at El Vergel continue to innovate and utilize feedback from the specialty coffee industry. We are so excited to see some of our direct feedback given and utilized in this Lot of El Eden. This lot of EL Eden showcases their particular fermentation and drying style, but they have worked with us to showcase more of that beautiful Gesha Variety as well. Marked florals, with intense fruit character. This one is a fruit bomb for sure.
