La Palma Y El Tucan has made quite a name for itself winning multiple Barista and Brewers Cup competitions around the world. Including the 2019 World Barista Championship. This is the highest honor for a coffee producer and Barista combo. 2019 Baristas using La Palma Coffee took 1st 3rd 4th and 5th at the United States Barista Championship.
This Lot is the Brain Child of Sebastian Villamizar and features an ingenious idea to control fermentation. Sebastian borrowed from the old world using traditional wine fermentation vessels made of terracotta and buried in the forest to control temperature. He used this process for the 2019 World Brewers Cup in Boston taking 8th place in this prestigious competition.
The coffee ferments in these vessels for an amazing 120 hours before being then dried as a natural. This further amplifies the intense red fruit character of La Palma's coffees while maintaining the florals and variety characteristics that make Gesha Special. Here is a word from Kyle Ramage, who buys most of the coffees for Black & White.
