La Minita - Dota

MEET THE PRODUCER | At Hacienda La Minita, every aspect of coffee production is meticulously overseen, from the saplings in the on-site nursery to the final processing steps at their own mill, Empresas de Antioquia. Named after their flagship farm in Tarrazú, La Minita has been in production since the 1960's, importing and exporting coffees since 1985, and established their own milling operation in the early oughts. Today, they have over 80 full-time employees, with an additional 150 contracted laborers and over 600 pickers at harvest time. Their impact on the community of Los Santos can hardly be overstated, and their commitment to supporting and equipping their employees (through entities like available on-site housing, and savings plan contribution matching, among others!) is a commendable model which is all too rare in the industry as a whole. 

This lot, called La Gloxina, is La Minita's trademarked lot for the Dota region of Tarrazú, and it is composed of several Caturra and Catuai lots from multiple smallholders in Dota. 

TRUST THE PROCESS | After being picked at peak ripeness, the coffee cherries are first sorted by density before being de-pulped and partially de-mucilaged. Then, they go through a second round of sorting (this time in a Colombian channel) and fermented in dry tanks for 10-12 hours before washing. Finally, the washed beans are mechanically dried in a machine called a Guardiola, which is fed by a biomass furnace running primarily on parchment. And then, because two rounds of sorting isn't nearly enough, the lot is hulled, sorted by screen size, sent through the density table twice, and then finally subjected to a round of optical sorting before the whole process is complete. 

TAKE A SIP | Clean, fresh, and supremely easy-drinking, this is a coffee you can share with your dad. Sweet oranges, white grape, and marzipan call out from the cup, letting you know that each of the flavors in this coffee have been impacted by its profound sweetness. It won't offend any palette, but it'll likely delight all of them.
